According the the US ASHRAE standard, restaurants should maintain a minimum of 6-8 air changes per hour, depending on the size and seating capacity of the restaurant.
When considering virus protection (e.g. against the COVID-19 coronavirus), higher air changes – sometimes up to 12 ACH – may be needed.
